Oil
In the heart of the Tuscan hills, about 300 metres above sea level, lies our olive grove of about 2 hectares in Sassetta: facing south/south-west and constantly ventilated, it benefits from an ideal microclimate for optimal ripening of the olives, naturally protected from the oil fly.
Surrounded by the forest, the olive trees, cultivated in the traditional classic vase form, grow in a balanced, well-aired and sunny manner, an ideal condition for the development of healthy drupes rich in aromatic substances.
The varieties cultivated – Pendolino, Moraiolo, Leccino and Frantoio – are skilfully balanced to produce an extra virgin olive oil that best expresses the characteristics of the land.
The result is an extra virgin oil of extraordinary elegance:
- Medium fruity, with herbaceous, fresh almond and artichoke hints
- Intense and persistent bouquet, with vegetal notes and light spicy nuances
- The taste is harmonious and rounded, with balanced spiciness and bitterness, indicative of a high concentration of polyphenols and natural antioxidants.
An oil with a strong but fine character, perfect for enhancing the authentic flavours of Mediterranean cuisine: bruschetta, rustic soups, grilled meats, fish and fresh or cooked vegetables.
